Grilled Lamb Flatbread with Goat Cheese and Arugula



1 package of mini, ready-made flat bread crusts
2 pounds Cedar Springs or Shepherd’s Pride Butterflied leg (cooked and shredded)
1 jar or tube premade pizza sauce
1 large package goat cheese, crumbled
1 bag arugula

Directions for Lamb

  1. Prepare grill (charcoal or gas) according to manufacturer’s directions for medium heat.
  2. Season or marinate lamb with herbs or spices, as desired.
  3. Grill, turning occasionally until desired doneness. For medium rare cook to 145F, for medium cook to 160F, for well-done cook to 170F.
  4. Shred leg meat.

Directions for Pizza

  1. Remove ready-made crusts from package and spread generously with sauce.
  2. Top flatbread with cooked, shredded lamb and goat cheese.
  3. Place flatbread on grill and cook at medium heat for 8-10 minutes.
  4. Remove flatbread from grill and top with arugula.
