Veal Chops with Mango Salsa


Ingredients for Mango Salsa

1 ripe mango, peeked and cut into cubes
1 garlic clove, minced
1/2 small jalapeno, diced
1/4 shallot, minced
2 tablespoons cilantro, chopped
Pinch of salt
Juice of half a lemon

Ingredients for Veal Chops

4 Cedar Springs Veal Chops
3-4 sprigs of mint, minced
1 teaspoon salt
Fresh cracked pepper
Juice of half a lime

Directions for Mango Salsa

  1. Mix all ingredients together in a bowl and let flavors mingle.
  2. Leave in refrigerator overnight or prepare before putting the veal on the grill.

Directions for Veal Chops

  1.  Mix together the spices, mint and lime juice in a bowl. Transfer marinade to a sealable plastic bag and toss in chops or coat chops with marinade by hand.
  2. Grill on medium heat or broil in the oven until veal chops are medium rare, about 7 minutes on each side.
  3. Serve veal warm off the grill or from the oven topped with salsa. This dish is perfect with a simple mixed green salad or sautéed greens.
