Spicy Ramen with American Lamb Chop


4, 6-8oz. Shepherd’s Pride or Cedar Springs Lamb Loin Chops, Frenched if desired
1/2 Qt Gochujang Marinade (see recipe below)
1/2 lb Ramen Noodles
4 oz. Shiitake Mushrooms, sliced
4 oz. Radish (pickled, daikon, or other, sliced)
4 Baby Bok Choy, halved & blanched
4 Hard Boiled Eggs, peeled & halved

Gochujang Marinade Ingredients

1/2 cup Gochujang* (Korean Hot-Pepper Paste)
1 Tbsp. Garlic, chopped
1 Tbsp. Ginger, chopped
3/4 cup Mirin
3/4 cup Soy Sauce, Low-Sodium
1/4 cup Honey
1/4 Tbsp. Sesame Oil

*Substitute Option: Sriracha to taste (it has a bit more heat).

Broth Ingredients

3 cups Chicken Stock
3 Garlic Cloves, peeled, halved
2 Tbsp. Soy Sauce
1/2 tsp Worcestershire Sauce
1/4 Tbsp Ginger, chopped
1/2 tsp Chinese Five Spice
Dash of Chili Powder
1/4 tsp Sugar

Garnish Options

Nori, Sheet, sliced
Sesame Seeds
Red Chili Flakes
Onion, Green, thinly sliced


  1. In a large bowl, combine all Gochujang marinade ingredients and whisk together. Keep cold until use.
  2. Place lamb In large ceramic dish and cover with the marinade. Let sit at room temperature for 1.5 hours.
  3. In pot of boiling water, cook ramen noodles for approximately 5 minutes then strain.
  4. For broth: In a large sauce pan, add chicken stock, garlic cloves, soy sauce, worcestershire, ginger, five spice and chili powder together and bring to boil. Reduce heat to simmer for 5 minutes. Add sugar to taste.
  5. Preheat grill to medium heat and oven to 350℉.
  6. Remove chops from marinade and remove excess marinade. Place chops meat side down on for about 2 minutes; flip and grill other side for about 2 minutes. Remove chops from grill and place on sheet pan and put in oven for 8 minutes (130℉ approximately). Remove, let rest for 5 minutes. Slice loin chops in half.
  7. Assemble: Divide the noodles evenly in bowls. Place loin chop on top of noodles along with mushrooms, radish, baby bok choy, half egg.
  8. Bring stock to boil once again and then divide the stock in the soup bowls.
  9. Sprinkle desired toppings.
